The flavor of success: Local resources prepare salsa maker for growth

Carla Gallegos-Ortega’s homemade salsas were a hit with family and friends for as long as she can remember. In 2017, she entered the Salsa Festival in Albuquerque’s Old Town and enlisted her daughter and a few friends to help her produce 16 gallons of salsa in an outdoor tent.

My part is a two-part story. Let’s start part one: Evelyn and I decided a few weeks ago to escape for a couple days and go fishing. We would go to our son-in-law’s property in Horca, Colorado, 17 miles west of Antonito. The travel restrictions for Colorado were lifted at that time.

COVID-19 has presented a serious challenge to Cibola County. It seems that Evelyn, Duke Marie and I watch more TV now than normal due to our home distancing during this world-wide COVID-19 pandemic. We primarily watch old car restorations.
